Coconut Rice

Coconut rice with dry fruits and nuts

After all that talk about coconut and it's amazing health benefits in my previous post, I thought I should share this utterly delicious coconut rice. Enjoy!



Serves: 6-8
  • 2 tablespoons oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 2 fresh green chilies such as Serrano or jalapeƱos, cut lengthwise into two
  • 2 cups basmati rice
  • 2 teaspoons salt or to taste
  • 1 14 ounce can light coconut milk
  • 2 cups water

  • Garnishing:
  • 2 tablespoons dry apricots, cut into thin slivers
  • 2 tablespoons golden raisins fried in a tablespoon of oil until plump
  • 2 tablespoons cranberries
  • 2 tablespoons roasted cashews
  • 2 tablespoons roasted pistachios
  • 1 tablespoon chopped cilantro

Heat oil in a medium sauce pan over medium heat. When oil is hot add ginger, garlic and fresh green chilies and stir fry for about 1 minute. Add rice and stir fry until all rice granules turn white. Stir in salt, coconut milk and water. 

At this point you can transfer the mixture to rice cooker and finish cooking, Alternately, bring the rice mixture to boil. Reduce heat to lowest setting. Cover with a lid and cook for about 20 – 25 minutes until rice is done. Let it rest for 10 minutes. Fluff up the rice with fork. Transfer to a serving platter.

Garnish with dry fruits and nuts and serve.
