Everyone agrees that the best part of Thanksgiving meal is there are leftovers the next day. The very next day we do enjoy the turkey, mashed potatoes, and stuffing. On the second day, I transform mashed potatoes into aloo tikkis, roasted root vegetables into soup, turkey meat into soup, and leftover bread into bread pudding. Here is the recipe for aloo (potato) tikki using leftover mashed potatoes from the Thanksgiving menu.
Yield: 12 -14
1/4 cup vegetable oil
1 medium onion, finely chopped
1 carrot, peeled and cut into small pieces
1/2 cup frozen peas
1 teapoon salt
1 tablespoon minced fresh ginger
2 minced fresh green chilies, such as serrano
2 tablespoons chickpea flour/besan
1 tablespoon lime juice
4 cups leftover mashed potatoes
all-purpose flour for dredging the patties
oil to fry
Cilantro chutney
Heat oil in a skillet, over medium high heat. When the oil is hot add the chopped onion. saute until onion is translucent. Add carrots and peas and cook until tender with a teaspoon of salt. Add ginger and green chilies and fry for a minute. Add chickpea flour/besan and stir in. Turn off the heat and add lime juice and mashed potatoes and mix to combine all the ingredients well.
Divide the mixture into 12 - 14 portions. Make each portion into a round or oval patty. Dredge each patty in all purpose flour.
Add 3 - 4 tablespoons of oil to a large heavy bottom skillet. Heat over medium high heat. When oil is hot, place patties in a single layer and cook until golden brown at the bottom. Gently flip the patties to the other side and drizzle more oil around the patties as needed. Cook for another 3 - 4 minutes until tikkas are golden brown crust. Proceed with the rest. Serve with cilantro chutney.
